Dried Fairy Ring Mushroom

The peak of the clove swallow is in spring and lasts until early summer. Because of the tough stalks underneath, only the caps including the stalk tip are used for consumption. Its taste is rather spicy, which is why it is also known as a soup mushroom. The Fairy Ring Mushrooms are wild mushrooms and therefore do not come from a regulated cultivation. They were collected in the northern forests of Spain and then dried.

The fairy ring mushroom tastes best with:

  • Polenta
  • Pasta
  • Rice
  • Sauce
  • Soup

 

Why are dried mushrooms so expensive, relatively speaking, and are there any advantages at all?

Fresh porcini mushrooms contain a lot of water and lose up to 90% of their weight when dried. This justifies the higher price of dried mushrooms compared to fresh ones. But don’t worry. The dried mushrooms swell to almost their conventional size during soaking and both their taste and consistency remain almost unchanged. One of the biggest advantages of dried mushrooms is their shelf life.  If stored correctly, sufficiently dried mushrooms can be kept for several years without any noticeable loss of quality. It is important for the shelf life that the mushrooms are stored in an airtight container.
