Dried Oyster Mushrooms

The oyster mushroom often appears in dense clusters on its substrate. Mostly the wild form grows on still living or already dead trunks, branches or deciduous trees. The growth period of oyster mushrooms is from autumn to spring. They are characterised by their mildly spicy taste.

Oyster mushrooms are most delicious with:

  • Fish
  • Game
  • with herbs on bread

 

How healthy are oyster mushrooms?

Dried oyster mushrooms are also perfect for a healthy diet, as they have many essential amino acids and are low in fats with a very high protein content (20%-40%). They also aid digestion with their high fibre content. Furthermore, it has been proven that oyster mushrooms strengthen the immune system, have an antioxidant effect, have many vitamins, especially vitamins B and D, and lower blood pressure, blood sugar and cholesterol levels.

Why are dried mushrooms so expensive, relatively speaking, and are there any benefits at all?

Fresh mushrooms contain a lot of water and lose up to 90% of their weight when dried. This justifies the higher prices of dried mushrooms compared to fresh mushrooms. But don’t worry. The dried mushrooms swell to almost their conventional size during soaking and both their taste and consistency remain almost unchanged. One of the biggest advantages of dried mushrooms is their shelf life.  If stored correctly, sufficiently dried mushrooms can be kept for several years without any noticeable loss of quality. It is important for the shelf life that the mushrooms are stored in an airtight container.
