The original Bircher Muesli recipe
For his Bircher Müsli, the Swiss used oat flakes soaked overnight in water, which he mixed with a little lemon juice and condensed milk. Shortly before serving, he grated an apple into it so that it would not turn brown before eating the muesli. Today, Bircher muesli is often served in many different variations with yoghurt and fruits such as bananas, pears, cherries or berries. Nuts or seeds – such as hazelnut kernels or sunflower seeds – are also popular ingredients and add valuable unsaturated fatty acids to the classic.
